A long time ago my husband’s grandmother shared her recipe for Thumbelina’s with me. This is a great recipe that allows you to fill the cookie with whatever you like. My husband loves them with raspberry jam, my daughter loves them with strawberry jelly, my son loves them with marmalade.
Personally, I can’t pick a favorite. It’s not that I love them all, I just don’t know what they taste like. I consider myself lucky if I get to lick the leftover crumbs off the plate. Just this morning I decided to have my daughter help me bake some for her Grandpa. However, they never made it to his house.
I had her to explain to him exactly what happened to the cookies we baked for him. She proudly told him “I baked you cookies and I ate them all. Then I licked the jelly out of the ones that were left!”
She didn’t exactly eat all of them. I am pretty sure her father and brother helped. At least her Grandpa was understanding.
Next time I know to bake in an empty house!
THUMBELINAS
Ingredients:
1/2 cup softened butter
1 cup flour
1/2 teaspoon salt
1/4 cup sugar
1 egg yolk
1 teaspoon vanilla
Directions:
(Bake at 350 degrees.)
Step 1. Cream butter and sugar. Beat in egg yolk and vanilla. Blend in flour and salt.
Step 2. Shape into 1 inch balls. Place on ungeased cookie sheet. Bake for 5 minutes.
Step 3. Remove from oven. Dent the center of each ball.
Step 4. Fill centers with jam or marmalade. Bake for another 12-15 minutes.

These are some of my favorite cookies. My grandma did something similar, but the look like moons with the jam inside! Still the best cookie ever!

I’ve never made Thumbelinas before, but I know my family would gobble them up also. They look incredible! I would probably add the wild blackberry jam I received from my best friend.

I totally made these for a visit to some friends this weekend – they were CRAZY easy to make and disappeared within an hour of our being there. Just the right amount of sweet – perfect for enjoying with coffee, too!!!
