With school being out for the summer, my kids have been joining me on all of my grocery shopping trips. This is without a doubt their least favorite summer time activity. I can’t blame them; I don’t even like grocery shopping. But, if I don’t do it – we don’t eat. On our last trip, I told my kids that I wanted each of them each to pick a new fruit or vegetable that they would like to try. I thought it would keep them interested…
I thought wrong. This was not a fun game for them. Maybe if I told them that I wanted them each to pick out a new ice cream or ice pop it would have sparked their interest. Our game went a little something like this. My son quickly presented me with a huge bag of celery. I told him that celery wasn’t a new food. He told me he didn’t like this game and would like to pick Oreos as his new food. I told him that wasn’t a new food either. He shrugged his shoulders and promptly deposited the Oreos into my cart and went to watch the lobsters.
My daughter on the other hand was decidedly much more excited about this game. She began hopping around excitedly talking about trying that new lettuce.
“You know the lettuce with puffy leaves?”
“The one that is all puffy?”
“You know, it’s like broccoli?”
I stared at her dumbfounded. Maybe this game was a bad idea. Puffy broccoli looking lettuce?
“It’s like popcorn??”
CAULIFLOWER! She was talking about cauliflower.
I was thrilled that she was so excited about trying something new. But, I think I need more coffee before heading out in the morning. We brought our puffy white lettuce home and decided on making roasted cauliflower. This recipe is easy to make, with limited steps. For me that is crucial when preparing food for my family. For breadcrumbs, you can use regular seasoned or gluten free seasoned. (I used 4C Gluten Free Seasoned breadcrumbs for this recipe.)
ROASTED CAULIFLOWER
Ingredients:
- 1 head cauliflower
- 1/4 cup extra virgin olive oil
- 1/4 cup seasoned breadcrumbs
- sea salt
Directions:
Step 1: Wash and cut florets from the head of cauliflower. Pat dry with paper towels.
Step 2: In a large bowl, toss with olive oil. Sprinkle bread crumbs on and toss again.
Step 3: Lay on a baking pan in a single layer. Sprinkle with sea salt.
Step 4: Roast in a pre-heated oven at 450 degrees for 20 minutes.
