Super Simple BLT Sandwiches

I know I shouldn’t be saying this, but some days, I just don’t want to cook. I’m cranky. I’m tired. And, more often than not, I’m scrambling to come up with something simple, nutritious and delicious to make for our family. On a good day, I can pull it off – but on a bad day…well, not so much.


With the kids back in school, it’s imperative that I plan our meals in advance. Otherwise, I end up standing in the kitchen,  staring aimlessly into the fridge, wasting a ton of time, wondering what to make. So I like to have a handful of easy-to-make “Go To” meals in my back pocket that I can rely on whenever I’m just not in the mood to be the culinary goddess that I imagine myself to be.

One of my favorite “Go To” meals is my Super Simple BLT Sandwiches. They’re fast, they’re easy and everyone in our family loves them. They’re also very adaptable – meaning my daughter can put a slice of American cheese on hers, and my son can load his up with his beloved avocado. Plus, when all of the toppings are laid out on one communal plate, everyone can assemble their own sandwich and I can take a breather!

In my humble opinion, BLTs are best served on a hearty loaf of freshly baked, whole grain bread. We’re lucky to have an amazing bakery nearby that makes the kind of bread I drool over. But, I’ve also been known to sneak over to my sister’s house and steal some of her freshly baked, homemade loaves. (She, unlike me, is not afraid of rising yeast and loves to bake bread from scratch!) Anyways, add this recipe to your back pocket and you’ll avoid staring into space the next time someone asks you, “What’s For Dinner?”.

RUSTIC BLT SANDWICHES

Makes 4 sandwiches.

Ingredients:

  • 16 pieces of bacon, cooked to your liking
  • 4 pieces of American cheese, if desired
  • 1 ripe Avocado, sliced into pieces
  • 2 cups fresh baby spinach
  • 1 large vine-ripened tomato, or 2-3 smaller ones, cut into slices
  • 1 loaf of rustic, whole grain bread (Our local bakery makes some awesome bread!)

Directions:

Step 1: Heat your grill. When hot, cook the bacon according to package directions, or to your liking (I like mine CRISPY!!).

Step 2: While the bacon is sizzling away, wash and slice your vegetables. Arrange them on a pretty platter so the kids will want to gobble them up!

Step 3: Cut your bread into nice, hearty slices. Assemble your BLT’s and enjoy!
