Ever since my first bite of my Mom’s banana bread, I’ve had a thing for quick breads. Not only are they insanely easy to make, but they’re also incredibly versatile. They can be sweet. The can be savory. They can be light and fluffy. They can be dense and rich. They’re the perfect treat for a Gemini who can never make up her mind!


In our house, we are notorious for whipping up banana bread – just like Mom’s. Actually, it’s Fanny’s recipe, but don’t tell anyone, okay? Whenever we have a bunch of bananas and they start to turn brown, we’re always scrambling to use them up. Freezing them for smoothies is an obvious choice, but sometimes, you just want to smell something cooking in the oven.

This Marbled Banana Bread combines the best of both worlds: Traditional Banana Bread and Chocolate Chocolate Chip Bread! It's a fairly simple quick bread.

Even though plain Jane banana bread is my personal favorite, and I can eat it all of the time, my kids can get sick of it. So the other day, I decided to jazz things up a bit and make a Marbled Banana Bread. This way, everyone wins. I get banana bread and the kids get chocolate!

Although this isn’t Mom’s recipe (ahem, Fanny’s), this quick bread version is super simple to make – just remember to set out several clean bowls before you start. You’re actually making two completely different batters and then swirling them together at the end.

MARBLED BANANA BREAD
Makes 2 loaf pans.

Banana Bread Ingredients:

  • 1 cup bananas (about 3 medium bananas)
  • 1/2 cup extra virgin light olive oil
  • 1/2 plain Greek yogurt
  • 2 eggs, whisked
  • 1 teaspoon vanilla
  • 1 cup white flour
  • 1/2 cup whole wheat flour
  • 3/4 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon nutmeg
  • 1 cup chopped walnuts (optional)

Chocolate Bread Ingredients:

  • 1 1/2 cups plain Greek yogurt
  • 1/2 cup extra virgin light olive oil
  • 2 eggs, whisked
  • 1 teaspoon vanilla
  • 1 cup white flour
  • 1/2 cup whole wheat flour
  • 3/4 cup sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup semisweet chocolate chips
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda

Directions:

Step 1: Mash 1 cup of bananas. Add in olive oil, yogurt, eggs and vanilla.

Step 2: In a separate bowl, stir together flour, sugar, baking powder, cinnamon, salt, baking soda and nutmeg.

Step 3: Fold the wet ingredients into the dry ingredients. Set batter aside.

Step 4: Mix yogurt, olive oil, eggs and vanilla together.

Step 5: In a separate bowl, stir together flour, sugar, unsweetened cocoa powder, semisweet chocolate chips, baking powder, salt, and baking soda.

Step 6: Fold the wet ingredients into the dry ingredients. Set batter aside.

Step 7: Spray two loaf pans with cooking spray (I use coconut oil spray). Line loaf pans with parchment paper. Carefully and equally, divide the batters between the two pans. Swirl.

Step 8: Bake for 60-70 minutes. Check for doneness by inserting a toothpick in the center of the loaf and it should come out clean.
