Zucchini Tuna Boats

One of the best things about family is that when they have an abundance of vegetables in their garden, they’re all too happy to share their bounty with you. This has been our tasteful luck all summer long. Bags and bags of ripe, green zucchini and plump, juicy tomatoes – right off the vines and still warm from the morning’s sun. (Thanks, Nana and Poppy!)

I never tire of seeing my kitchen full of fresh veggies, which is why I love accepting gifts straight out of the garden. And when the gardens run bare, we simply head off to the U-Pick farms on the North Fork to get more veggies there. It’s been so easy to get fresh veggies this summer that I may just never garden again.

When you have all of these vegetables right at your fingertips, staring you in the face, you’re compelled to do something with them. So it kind of goes without saying that many of our summer meals involve different ways to use up garden fresh tomatoes and zucchini. From healthy dishes like our Mom’s Tomato Zucchini Bake or my sister’s Parmesan Tomatoes to sweeter treats like Orange Zested Chocolate Chip Zucchini Bread or Chocolate Ganache Covered Zucchini Cupcakes – we’re always happy to use our veggies up.

While some people may tire of zucchini and tomatoes by summer’s end, I never do. They are beautifully versatile and can be used in so many different ways. I also love that they fit into my healthier way of eating now that I strength train regularly and follow a 5:2 Plan. On my fast days, zucchini and tomatoes are my BFFs.

Plus, when I pair them up with Albacore Tuna – I am in Foodie Heaven! Yes, you heard me right: I love canned tuna.

But, wait a minute! Before you run away from me forever, I’m not talking about the gross gray, mushy stuff. No way – that kind of tuna makes me gag.

What I am talking about is Bumble Bee® Solid White Albacore Tuna. It’s beautifully white, meaty, and steaky. Is that even a word? I’m not sure, but it describes this canned tuna very well. From the moment you open the can, you can see the difference – large, flaky chunks that keep their firm texture and taste great.

Now this is my kind of tuna.

Plus, canned tuna is a great source of vitamins and minerals. It also packs a healthy dose of lean protein and healthy fats into our mid-day meal as well (see their website for full nutritional facts). I’m always amazed at its versatility too! Canned tuna can go from these delicious Gluten Free Tuna Croquettes to these super simple Zucchini Tuna Boats in just a few minutes.

These Zucchini Tuna Boats only need 5 minutes of prep time – just scoop out the zucchini halves, chop up some tomatoes and roasted red peppers, mix in some Albacore Tuna, and sprinkle on cheddar cheese. Then you bake them in the oven until they’re nice and hot. These Zucchini Tuna Boats are so delicious I could eat them every day.

ZUCCHINI TUNA BOATS

Ingredients:

  • 1 can of Bumble Bee® Solid White Albacore Tuna
  • 1 large zucchini
  • 1 ripe tomato
  • 1 roasted red pepper
  • 1 large scallion
  • Extra virgin olive oil
  • Seasonings to taste: paprika, onion powder, oregano, salt and pepper

Directions:

Step 1: Preheat oven to 400. Line a baking sheet with parchment paper.

Step 2: Wash and dry all vegetables. Cut zucchini into two halves, lengthwise. Scoop out seeds and discard (or feed to your chickens).

Step 3: Dice the tomatoes, scallion and roasted red peppers. Rinse and drain tuna. Mix all of these ingredients together in a large bowl.

Step 4: Place the zucchini halves on the parchment paper. If they are leaning to one side, simply place some balled up pieces of tinfoil under them to keep them in place.

Step 5: Fill zucchini boats with tuna mixture. Sprinkle shredded cheddar cheese on top. Garnish with seasonings. Drizzle on some extra virgin olive oil.

Step 6: Bake in the oven for 20 minutes or until zucchini is fork tender.
