Gluten Free Peach Blueberry Crumble

A few weeks ago, my sister and I took our kids peach picking. We thought it would be a fun way to spend a lazy summer day on the Eastern End of Long Island. As we headed out to the peach farm, I made a mental checklist of all the peach recipes I could make. As the kids told knock-knock jokes in the back, I sat in the front with my sister talking about cobblers, jams and crisps.


As we parked our car and led the kids into the peach fields, our visions of the great time we were going to have came to an abrupt end. We had unwittingly picked the hottest, humid-est, kid-unfriendliest day of the summer to go peach picking. Before they even got to to the first row of peach trees, they started asking each other if they were melting…like Olaf.

As we prodded them along, we started to notice the bees, yellow jackets and hornets. There were a lot of flying, stinging insects on the ground feasting on all of the fallen peaches. As the kids began to screech, scream and run away from the bees – my sister and I shared a look of dismay.

We thought we were going to have fun…

So we did what we always do in a moment of “kid crisis.” We decided to divide and conquer. My sister began frantically filling up our bottomless U-Pick bags with peaches. I gathered the kids around – mother hen style – under the tiniest bit of shade I could find. We played the animal alphabet game and Eye-Spy.

Amazingly, we were able to avoid an epic meltdown in the middle of the peach field. To everyone’s amazement, none of the kids actually melted, no one was stung by the horrific flying creatures, and my sister and I each got a to bring home a huge bag of beautifully ripe peaches.

I have to admit, not all of our outings go as planned. Not everything is going to be as picturesque as your mind imagines it. As every mom knows, sometimes it just boils down to the time you get to spend together – good or bad. GLUTEN FREE PEACH BLUEBERRY CRUMBLE

Ingredients:

  • 5 ripe peaches
  • 1 cup blueberries
  • 3/4 cup white rice flour
  • 1/4 cup gluten free oatmeal
  • 8 TB unsalted butter
  • 1/2 cup brown sugar
Directions:
Step 1: Preheat oven to 350 degrees.
Step 2: Wash, peel and slice your peaches. Set aside in a large bowl.
Step 3: Wash and drain your fresh blueberries. Add to your bowl of peaches.
Step 4: In a separate mixing bowl combine white rice flour, oatmeal, and brown sugar. Using a pastry blender or your fingers crumble 5 tablespoons of butter into the dry mixture. (It should feel mealy when you are done).
Step 5: Put the fruit into a baking dish. Cover evenly with the dry mixture. Cut butter into small pieces and sprinkle on top of the flour mixture.
Step 6: Bake for 30 minutes. If you like your crumble caramelized on top, put under your broiler for 2-5 minutes. Make sure you keep a close eye on it so it doesn’t burn!
