This past week, Long Island was wildly tossed into mid-summer temperatures without any warning. One minute, we were all enjoying beautiful, breezy, mid-70’s weather and the next, we were frantically tossed right into the 90’s. Needless to say, we were quite unprepared and spent the past few days sweating to death.

My sister and I had a series of projects that were due for We Know Stuff, so we decided to work side by side at my house. Unfortunately, I don’t have central air and we could feel the sweat trickling down our backs. The dogs were panting beside us making our feet disgustingly hot and all we wanted to do was talk about lazy summer days at the pool and the beach. Yuck.

As our minds tried to focus, they failed miserably. All I could think about was ditching my computer and heading outside to have an ice cold drink in the shade. My sister must have been thinking the same thing because when I asked her what she wanted for lunch, she said, “anything cold.”

I’ve recently taken an interest in beer shandies because they allow beer drinkers to take a walk on the “spritzer” side of life without having to give up their beloved choice of beer. So, I asked my sister if she wanted to try one with me at lunch. Like I said, it was sweltering hot outside, so I didn’t really have to twist her arm that much.

A beer shandy recipe is a bit different from a beer based cocktail recipe in that shandies mix beer with a fizzy or fruity beverage and a beer based cocktail recipe mixes beer with another type of beer or hard alcohol. I like to keep things pretty straightforward, which is why I like shandies. They allow me to still taste the beer, but it just adds extra effervescence to it.

There was a whole case of Corona Light in the “beer fridge” out back as well as some lime soda that I picked up at the store the other day, so I wanted to use those two ingredients. I wasn’t quite sure what I could make, but a quick search online led me to an incredibly simple drink called The Snow White. My visions of an ice cold beer shandy were just a few minutes away.

I’m a big fan of Corona Light on super hot days for many reasons. For starters, it’s a super light beer with only 99 calories and it always pairs well great with spicy and citrus-infused dishes. (Cue the barbecue recipes!) Plus, you really can’t go wrong with a sessionable, pilsner-style lager.

A Beer Based Cocktail Recipe: The Snow White Beer Shandy

Ingredients:

  • 1, 12-ounce bottle/can of light lager beer (we used Corona Light)
  • 1, 12-ounce can of diet lime soda (any brand will do)
  • 1 fresh lime

Directions:

Step 1: Fill a tumbler style glass with ice. Crack open an icy cold Corona Light. Pour 3 ounces of beer into the glass. Then pour 9 ounces of lime soda on top. Garnish with a few lime slices and enjoy! (Hint: No need to be so technical about it – just count to 3 when you pour your Corona Light and then count to 9 when you pour the soda!)
