Last Christmas, my children begged me to make them cake pops. Ordinarily, this wouldn't be such a difficult task, but…they waited until two days before Christmas to ask – and wouldn't take no for an answer.

I had never made cake pops before and I was very nervous, but I figured – what was the worst that could happen? If the cake pops didn't stay on their sticks, we'd just serve a party platter full of decorated cake balls.

But Santa must have been watching because our cakes pops came out awesome! I was so happy that I could fulfill my kids' last minute dessert request, and I loved that once the initial cake balls had been dipped into the chocolate, the kids were able to help me decorate them too.

Crazy for Cake Pops features 50 all-new cake pop creations and is chock full of photos to boot. (I just love cookbooks with photos!!) By reading Molly's book, I found also out several secrets to making perfect cake pops.

The biggest helper for me was to make the cake ahead of time and let the frosting-cake mixture sit overnight in the refrigerator. The cake balls roll much easier if the frosting and cake really get a chance to meld together!

Another super important tip that I picked up from Molly is: crumble, crumble, crumble. The finer you crumble the cake, the better looking your cake pops will be. Think about it – if you've leave big lumps in your cake mixture, you're bound to have big, crunchy, cake-blobs sticking out of your cake pops. Yuck!

 

I could go on and on about the other secrets I learned from Molly, but I'm afraid that would just take way too long.
