Walnut Coffee Cake

Real Simple Walnut Coffee Cake
I have been clinging to this recipe for Walnut Coffee Cake since 2004 when I found it in Real Simple magazine. I am not the baker extraordinaire that my sister is, but this is the one request my family always makes! In celebration of my brother-in-law's birthday I made this special cake for him! This is a really easy recipe that needs very few ingredients!

Ingredients
1 cup light brown sugar, packed
6 tablespoons unsalted butter, melted; plus 3 tablespoons unsalted butter, softened
3 cups walnuts, chopped
2/3 cup all-purpose flour
1 box yellow cake mix
3 large eggs
1/3 cup vegetable oil


Directions

Step 1.
Preheat oven to 350º F. *Butter two 1 1/2-quart loaf pans. Combine half the sugar, melted butter, and 2 1/2 cups of the walnuts for the topping. Divide the mixture evenly between the pans, cover the bottoms evenly.

Step 2.
For the filling, cream the rest of the sugar and the softened butter in a bowl. Stir in the flour and the rest of the walnuts. Set aside.

Step 3.
Combine the cake mix, eggs, and oil, along with the amount of water called for by the package directions in a large bowl. Beat well. Pour 1/4 of the cake batter into each pan, over the topping. (Remember you are assembling the cake upside down 😉 Spoon the filling evenly over the cake batter, dividing it equally between the 2 pans. Add the rest of the cake batter, dividing it evenly between the loaf pans.

Step 4.
Bake until a knife inserted into the center of the cake comes out clean. Approximately 40 minutes. Cool for 10 minutes, then unmold bottom-side up onto a cake plate**.

*Make sure you really grease up your loaf pan. I use Crisco, I think it helps unmold the cake a little better.

**Don't worry if the top falls apart after you flip it. You can easily mold the topping back together while it is still warm.

(Recipe makes 2 loaves).

  3. In a large mixing bowl, combine the cake mix, eggs, and oil, along with the amount of water called for by the package directions. Beat until well combined. Pour 1/4 of the batter into each pan, over the topping. Spoon the filling mixture evenly over the cake batter, dividing it between the 2 pans. Add the remaining batter, dividing it evenly between the loaf pans.
  4. Place the loaves in oven and bake until a knife inserted into the center of the cake comes out clean, about 40 minutes. Let cool 10 minutes, then unmold bottom-side up onto a cake plate. Serve warm or at room temperature.
     

    Note: This recipe can also be made as a bundt cake. 

     

    This recipe makes 2 loaves.

    as the referenced brother in law, I have to say that this cake is amazing! i am holding onto a small piece left over from the weekend, trying to make it last at least one more day. thank you!
