This is one of my husband's favorite winter meals. He always seems to request this stew food when we have awful weather! In light of the pouring rain and flood watches over the weekend, we decided to cook up some of my husband's favorite Winter Beef Stew.
Ingredients:
1/3 cup flour
1/2 tsp salt
1/2 tsp pepper
Stewing beef (1 -1.5 lbs)
Olive Oil 2 tablespoons
4 cups beef broth
4 coups hot water
4 large carrots
3 large potatoes
1/2 tsp garlic powder
1/4 tsp pepper
1 tablespoon salt
1 tablespoon butter
Step 1:
Trim excess fat from beef. Cut into bite size cubes. Dredge in flour, salt and pepper. Brown beef in 2 tablespoons olive oil over medium heat.
Step 2:
Peel carrots and potatoes. Cut into chunks.
Step 3:
For the broth, combine beef broth, water, garlic powder, salt, pepper and tablespoon butter. Add browned beef to the broth and bring to a boil. Reduce to simmer. Simmer over low heat for 1 hour.
Step 4:
Add carrots and potato, simmer for 45 minutes.
