Red Velvet Cupcakes

Barefoot Contessas Red Velvet Cupcakes
A few months ago I was telling my sister about my husband's dessert request:

"Do you know how to make a red velvet cake?"
"A what?"
"Can you make one?"
"Uhhhhh yeah….I think so."


I immediately called Denine, she's the one that inherited the baking gene. I told her I was looking online at recipes and was instantly overwhelmed. I was hoping if I sounded really desperate she would just show up on my doorstep with one she magically whipped up.

A week later it wasn't my sister at my door, but the Barefoot Contessa's Red Velvet Cupcake kit. I couldn't believe it! I wish everyone had a sister as sweet as mine!

Ingredients:
Barefoot Contessa Red Velvet Cupcake & Cream Cheese Frosting Kit
12 tablespoons butter
2 large eggs
8 ounces cream cheese

(Preheat oven to 350 degrees)

Step 1:
Line muffin tin with paper liners. Combine 6 tablespoons butter and 1 cup cake mix. Beat on medium speed until fluffy. With mixer on low add eggs one at a time, and then add alternately in thirds remaining mix and 1/2 cup water. Fill muffin cups until almost full.

Step 2:
For the frosting, combine 6 tablespoons butter and cream cheese. Mix on low. Slowly add the contents of the frosting packet. Beat until smooth.
