On this wonderful National Peanut Butter Lover's Day I would like to share with you my favorite peanut butter cookie recipe. I have been making this recipe for a few years now, finding the original recipe in the Fannie Farmer Cookbook. This recipe make more of a cakey cookie than a crispy one. This dough is very versatile and you can easily pop a Hershey Kiss into it or add chocolate chips if you like your peanut butter with a little chocolate! Enjoy!
Ingredients:
1 cup shortening
1 teaspoon vanilla
1 cup granulated sugar
1 cup brown sugar
2 eggs, beaten
1 cup peanut butter
3 cups flour
1/8 teaspoon salt
2 teaspoons baking soda
Step 1:
Preheat oven to 350 degrees. Grease cookie sheets. In mixing bowl, cream the shortening, vanilla and sugars. Add the eggs and beat well.
Step 2:
Stir in the peanut butter.
Step 3:
Mix together the flour, salt, and baking soda. Add to the peanut butter mixture.
Step 4:
Form small balls and place on the cookie sheets. Press each cookie twice with the back of a fork to make a crisscross design.
