My college roommate gave me this Strawberry Spinach Salad Recipe. It’s the perfect salad for hot, summer days. Make lots of it because it goes fast!

Over the weekend, I went to the Farmers’ Market and picked up a ton of fresh strawberries. As I was dreaming of ways to use them up, I was reminded of our trip to Peck Lake, NY last year.
In August, we drove up to “The Lake” to visit my college roommate, WaWa. We had so much fun swimming, kayacking, and watching my husband compete in The Peck Lake Triathalon that we decided to make it an annual vacation for the family.
No vacation would be complete without loads of delicious food to nosh on, and WaWa and her husband made our bellies proud. One of the best dishes they served us was a gorgeous Strawberry Salad that made me so happy, I had seconds, and wanted thirds, but by that time, it was all gone!
Serves: 6-8 persons
- 1/2 cup extra virgin olive oil
- 1/3 cup sugar
- 1/4 cup red wine vinegar
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon paprika
- 6 cups mixed greens
- 2 1/2 cups strawberries, sliced
- 1/2 cup chopped nuts, optional (walnuts and almonds work well!)
