A few days ago, my husband brought home a giant bag of peaches. Having him come from work bearing gifts in the form of fresh peaches, was definitely unusual. He explained that he passed a farm stand on the way home from visiting a client and they had – peaches. I have to be honest here, I didn’t even know he liked peaches.
I have never heard him mention the fruit. I have never witnessed him eating a peach. I’m not even sure I have seen him eat anything with peach as an ingredient. Needless to say, the bag of peaches took me by surprise, especially when I had absolutely no idea what to do with that many peaches.
Time to open up the Fannie. I mention the Fannie Farmer Cookbook on a regular basis as it is my “go to” book. My dad always used to say “You can never go wrong with the Fannie!” I live by those words. The recipes are so easy to follow and you can find a recipe for anything. I looked up this easy fresh peach cobbler recipe and put those peaches to good use.

FRESH HOMEMADE PEACH COBBLER
Ingredients:
12 tablespoons butter, melted
3 cups peeled and sliced peaches
1/2 teaspoon salt
2/3 cup sugar
1/2 cup milk
1 egg
1 1/2 cups flour
2 teaspoons baking powder
Step 1:
Preheat the oven to 375. Pour 4 tablespoons of the butter into a baking dish. Spread it evenly and arrange the peaches over it.
Step 2:
Mix 1/4 teaspoon of the salt with the 1/4 cup of sugar and sprinkle it evenly over the peaches; set aside.
Step 3:
Pour the remaining 8 tablespoons of butter into a bowl, add the milk and egg, beat well. Mix the flour, baking powder, the remaining 6 tablespoons of sugar and the remaining 1/4 teaspoon of salt in a bowl. Stir in the milk and egg mixture, beat until smooth. Plop about 12 clumps of the batter (1/4 cup each) over the peaches.
Step 4:
Bake for 35-45 minutes or until a toothpick comes out clean. Cover loosely with foil if top starts to get too brown. Serve from the pan in squares, fruit side up.
