
I recently had the opportunity to review Linda McCartney's Vegetarian Home Cooking. Although we're not a vegetarian family, my young children really enjoy eating fruit, vegetables and whole grains at this point in their lives. As their personal chef, I am more than happy to make them meatless meals if it means that the entire family can eat the same thing!
I recently made Linda McCartney's Mushroom Risotto. This recipe was both delicious and easy to make. You can see the recipe here.

What I really liked about Linda McCartney's Vegetarian Home Cooking is that she is a mom first, and it really shows in each one of her recipes. She was concerned about what she was feeding her family and really tried to focus on the nutritional quality of the meals she made. She also wanted to help in the prevention of cruelty to animals, which is why her meals are all vegetarian in nature.

I also love that the recipes have a manageable amount of easy-to-find ingredients and can be made rather quickly. Vegetarian Home Cooking immediately found a home inside of my very large pocketbook — right next to the Polly Pockets and Toy Story fellas. I love having this cookbook on hand when I am grocery shopping – it helps me quickly find the ingredients I need to make a nice, nutritional meal for my family.

Vegetarian Home Cooking surprised me with its recipes – there is an abundance of realistic meals, side dishes and desserts that I can easily make on a regular basis.
