Cranberry Corn Bread

Like most kids, when mine get home from school they are STARVING. The second I pick them up from school, they start asking me what are they having for a snack. As soon as they are in the door, they are standing in front of the pantry digging through the goldfish, pretzels, and granola bars.


I try not to get crazy about what my children eat, but sometimes I just can’t help it. I don’t find a lot wrong with them choosing those items. There are far worse choices they could be making.

That’s when I think to myself: “Would I prefer that they eat cheese and crackers or maybe have a bowl of cereal with a piece of fruit instead?” The answer is always going to be yes.

But, this problem runs deeper than them filling up on a junky option. The problem becomes them not being “filled up”. Then they are STARVING again right before dinner. This becomes a nightly battle with them.

They are too hungry to wait for dinner and they will surely starve to death if I don’t give them another snack before they eat dinner. But we all know how that goes. A little snack here, a little snack there, adds up to no appetite for the healthy dinner I’ve made them.

It’s really frustrating…actually, that’s putting it lightly. It makes me borderline insane.

I realized that I should be giving them a choice between two healthy snacks. Something healthy and if possible, homemade. I started them off this week with some Cranberry Corn Bread and a piece of fruit after school. They just about made it until dinner time!

CRANBERRY CORN BREAD

Ingredients:

  • 1 1/4 cup all-purpose flour
  • 3/4 cup Quaker® Enriched Corn Meal
  • 1 cup Sun-Maid Cape Cod Cranberries
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup skim milk
  • 1/4 cup vegetable oil
  • 1 egg, beaten

Directions:

Step 1: Heat oven to 400 degrees F. Grease loaf pan. Combine dry ingredients.

Step 2: Stir in milk, oil, egg, mixing just until dry ingredients are moistened.

Step 3: Pour batter into the pan. Sprinkle granulated sugar on top. Bake 20 – 25 minutes. (My bread took close to 40 minutes.) Test with a toothpick inserted into the center. Bread will be done when the toothpick comes out clean.
