This Slow Cooker Broccoli Potato Cheese Soup is an easy recipe for a cold winter’s day. Swap chicken broth for vegetable broth for a vegetarian meal. This quick crock pot soup is full of cheese, broccoli and potatoes.
Has the cold weather finally hit your neck of the woods? For us here on Long Island it finally has and I can’t wait for warm soup, hot chocolate and roaring fires. Now normally, I am not one to wish for the cold, winter weather. When you live in a coastal community, it’s a bit sad to see the warm, sunny days disappear. Our summer into early fall days are filled with trips to the beach, bike rides and plenty of swimming. There are just so many fun ways to spend the day with your family.
When you live in a area that has four wonderful and diverse seasons, a little preparation can go a long way. Spending time outdoors requires a lot more clothing and a bit more planning. For us, we start the season off by making sure everyone in the family has what they need to stay dry and warm during our outings. As we unpack all of our winter gear, we check to see who has outgrown their jackets, boots, gloves and hats. We promptly donate what was outgrown and buy what we are missing.
The prep work doesn’t stop there, we make sure our shovels are in good condition and we have a garage full of rock salt and firewood. Driving in the snow can be stressful and dangerous, which is why we try to stock up on as many items as we think we will need. You always want to be prepared for a snowstorm!
After a long day of playing in the snow or trekking through the woods, there is absolutely nothing better than a hot bowl of soup. I love to wake up a throw a bunch of ingredients into my trusty slow cooker before we head out for the day. Slow cooking is the easiest form of cooking I can think of, and it’s almost impossible for me to mess up. Which is always a good thing!
One of my favorite recipes is this cheesy broccoli and potato cheese soup. It take mere minutes to cut up the vegetables and toss them into the slow cooker. The addition of Kraft Natural Shredded Cheddar Cheese, makes it the perfect comfort meal for lunch or dinner. When it’s hot and ready, serve it with your favorite rolls, biscuits or french bread.
SLOW COOKER BROCCOLI POTATO CHEESE SOUP
Ingredients:
- Kraft Natural Shredded Cheddar Cheese (8 oz)
- Garlic, 1 clove
- 2 lbs Fresh broccoli (3 cups)
- Carrots (1 cup)
- Vidalia onion (1/2 a medium onion)
- White potatoes (2 medium potatoes)
- Chicken stock (2 cups)
- Whole milk (2 cups)
- White flour (1/4 cup)
- Nutmeg (1/4 tsp)
- Salt (1 tsp)
- Pepper (1/4 tsp)
Directions:
Step 1: Peel and dice your potatoes and carrots. Chop your broccoli – put them in your slow cooker.
Step 2: Mince your garlic and onions – put them in your slow cooker.
Step 3: Put the rest of the ingredients on top and stir.
Step 4: Set your slow cooker to high – 4 hours. Stir at the end of each hour.
Step 5: Puree with an immersion blender or by putting small batches in a blender.
