Gluten Free Lemon Poppy Seed Muffins Recipe

  

With March coming to an end, it seems like everything around me is trying to signal that spring is finally on it’s way. The birds are singing, the daffodils are blooming and the tree pollen has filled the air. I even had the opportunity to feed a friendly wild turkey on my front lawn this weekend. We had the most beautiful, unseasonably warm day on Saturday and it truly reinforced the idea that Spring was just around the corner!


However, Sunday morning sang a very different tune. We promptly had our hopes of milder weather dashed overnight by a 30 degree drop in the temperature. Waking up to yet another cold, grey day was enough to immediately out everyone into hibernation mode. As disappointed as I was about the chilly weather, I decided the only thing to do was bake up a little bit of springtime.

Zesting the lemons for this recipe filled the kitchen with a beautiful, fresh scent that it was hard to believe the temperature outside was barely reaching 40 degrees. This recipe for Gluten Free Lemon Poppy Seed Muffins is easy and quick to make when you are short on time. To save on time, I usually blend the oats ahead in advance in my Vitamix and store them in a cool, dry place. These muffins are best enjoyed warm with a bit of butter and jam and a hot cup of tea!

Gluten Free Lemon Poppy Seed Muffins Recipe

Ingredients

1 cup Bob’s Red Mill, 1 To 1 Gluten Free Baking Flour

3/4 cup oat flour made from Bob’s Red Mill Gluten Free Old Fashioned Rolled Oats

2 tsp lemon zest (from 2 large lemons)

1 tablespoon poppy seeds

1/2 cup sugar

1 tablespoon baking powder

1/4 cup melted butter

1 egg (beaten)

1 cup milk

Preheat over to 350 degrees

Directions

Step 1:

Grind 1 cup gluten free rolled oats in your blender. Blend for 30 seconds or until oats resemble a medium to fine mixture. Measure out 3/4 cup and save the rest in a storage container.

Step 2:

Whisk together the oat flour, gluten free flour, lemon zest, poppy seeds, sugar and baking powder in a bowl.

Step 3:

Add the melted butter, beaten egg, milk and stir until combined.

Step 4:

Add to silicone muffin tins.

Step 5:

Bake for 18-20 minutes.
