2 Easy Homemade Popsicle Recipes

Summer’s here and we’ve been busy making a ton of these Easy Homemade Popsicle Recipes. The kids love the cherry ones. We love the ginger cantaloupe ones!

It’s hot and humid here this week. As in, the minute I walk outside, my hair turns into a giant ball of frizz. Instantaneously, which is why I’ve left it curly for days now.

Sigh. It’s also so hot that you can feel the sweat trickling down your shirt before you even make it to the car. Blech.

So what’s a work at home mom like me supposed to do when my kids are hollering that it’s too hot to do anything? Shove them in the air conditioned kitchen and put them to work making ice pops. Yep, that’s right. Because popsicles make everyone happy – even grown ups, like me.

They’re sweet and they’re cool. They’re even kind of healthy if you keep an eye on the added sugar. (Yes, children, I see you trying to add more!).

These two Easy Homemade Popsicle Recipes can be made in a flash. Seriously, they’re so easy that the kids can make the cherry lemonade popsicle recipe all by themselves. However, they will need you to heat the sugar in the ginger cantaloupe recipe, but after that, they can do the rest!

2 Easy Homemade Popsicle Recipes

Cherry Lemonade Popsicle Recipe

Ingredients:

  • 1, 16.9 oz bottle of Tart Cherry Lemonade Refresh (by Cheribundi)
  • Sugar, to taste, if desired (This is a very tart drink, so if your kids like sweeter popsicles, add sugar.)
  • Ice pop molds

Directions:

Step 1: Using a blender (We love our Ninja!), empty the entire bottle of Cherry Lemonade Refresh into your blender. Add sugar.  Mix thoroughly.

Step 2: Carefully pour the liquid into ice pop molds and freeze upright overnight. Enjoy!

Ginger-Cantaloupe Popsicle Recipe

Ingredients:

  • 3 slices of fresh ginger
  • 1/4 cup sugar
  • 1 ripe cantaloupe
  • Sliced strawberries (optional)
  • Ice pop molds

Directions:

Step 1: In a small sauce pan, add the sugar and 1/2 cup water over medium heat. Cook just until the sugar has melted. Remove from heat and drop in ginger. Set aside until cooled. (Remove ginger when ready to use!)

Step 2: Slice cantaloupe in half and scoop out seeds. Spoon cantaloupe flesh into a blender. Blend until smooth.

Step 3: Add just enough of the cooled ginger syrup to sweeten as desired. Save the remaining syrup for another use.

Step 4: Pour into popsicle molds and freeze overnight. For a variation, push a few sliced strawberries down into the popsicle molds before freezing.
