How To Make Snowman Cupcakes That Will Put You In The Holiday Spirit

These super cute marshmallow snowman cupcakes are guaranteed to put you in a festive holiday mood. Using just two ingredients in the batter, holiday baking doesn’t get any easier than this!


Whenever I think of snowmen, I am reminded of one of the first times I ever made one with my kids. A Nor’easter had dumped mountains of snow upon us and my husband and I were busy building a set of snowmen for them to enjoy. Even the snow was well above their knees, they didn’t care. To them, our yard was a winter wonderland just waiting to be explored.

As we came close to finishing the first snowman, my husband said that we needed some sticks for the arms. My son was quite young at the time, but he was eager to accept the task from his father. I remember thinking that my son may not be able to find any sticks with so much snow on the ground and that I should probably go help him.

All of the sudden, we heard something scraping across the snow and our son huffing and puffing loudly behind us. We quickly turned around and there he was – tiny, proud, and dragging two of the largest tree branches you could ever imagine. They were almost as tall as him and at least twice as wide. They were much too big to use as the snowman’s arms, but as he stood there grinning from ear to ear, we knew we had to find a way to use them!

I don’t remember exactly what we did with them, but this joyful vision of our little lumberjack still brings a smile to my face whenever the first snowfall comes. So it’s only natural that over the years many of our holiday decorations and recipes involve snowmen like these adorable marshmallow snowman cupcakes.

This recipe was the result of my kids asking me to “bake them something fun” one afternoon and me not having any eggs in the house. A quick search online showed me that I could use Diet CokeⓇ to make “soda cupcakes.” To be honest, I was pretty doubtful that it would work, but the results were fantastic. As such, it’s now become the not-so-secret ingredient in these snowman cupcakes.

So, the other day, while we were at Sam’s Club doing our monthly shopping trip to stock up on bulk items, I made sure to pick up some 2 Liter bottles to store in the pantry. This way, if I ever run out of eggs again, I have a solid backup plan in case my kids’ sweet tooth kicks in. Marshmallow Snowman Cupcakes Recipe

Ingredients:

  • 1 box of chocolate cake mix
  • 12 ounces of Diet CokeⓇ
  • 1 can chocolate frosting
  • 12 marshmallows (not jumbo sized)

Directions:

Step 1: Place chocolate cake mix into a clean bowl. Pour Diet CokeⓇ into the cake mix and stir together until fully incorporated.

Step 2: Divide batter into 12 muffin tins and bake for 20-25 minutes.

Step 3: After removing cupcakes from the oven, allow to cool. Then frost with chocolate frosting and set aside.

Step 4: Using gel food coloring, dot on eyes, nose, and mouth to your marshmallows. Carefully stick the marshmallow snowman into the top of the cupcake.
