Cinnamon Toast Oatmeal

I was standing in the kitchen early Sunday morning drooling over the kid's Cinnamon Toast Crunch cereal. I remembered how much I loved that cereal when I was little. I was wondering if it was normal to be fantasizing over a bowl of cereal? Just as I made the decision that it was totally appropriate for a 34 year old mom to eat kid cereal for breakfast, my husband snapped me back to reality.

"How about oatmeal for breakfast?"

"Ugh."
He said "Did you say something?"
"Yeah, I said that sounds great!"

Then I said ugh again….quietly this time.

I begrudgingly pulled out the oatmeal and told myself to grow up a little. Oatmeal is good. As I scraped the the kid's leftover cereal into the garbage, it hit me. Cinnamon Toast Oatmeal. That might work.

Ingredients:
Oatmeal (1-Minute)
3 Cups skim milk
2 Tablespoons sugar
Cinnamon sugar
Holiday cookie cutter

Step 1:
Bring 3 cups milk and 2 tablespoons sugar to a boil.

Step 2:
Add oatmeal and turn down to low. At this point continue to stir until milk is absorbed. I stir longer than the 1-minute. I usually stir for 3 minutes and add an extra splash of milk at the end.

Step 3:
Spoon oatmeal into bowl. Place cookie cutter upside down on the oatmeal. The walls will form a barrier for the cinnamon sugar.

Step 4:
Take a teaspoon of cinnamon sugar and with your fingers sprinkle it into the cookie cutter.

Step 5:
Remove the cookie cutter and fill in any bare spots with the cinnamon sugar. Serve!
