The July/August issue of Everyday Food showed up in my mailbox last week. I was getting ready to place a Peapod order, so I gave my little magazine a quick once-over to see if I wanted to make anything in it. I found this refreshing Watermelon, Orange and Feta Salad towards the back of the magazine and had to try it!

Even though I was excited, my husband was not. He’s strictly a “salad-covered-in-Ranch-kind-of-guy”. However, I sweetly told him that if he can step outside his comfort zone and compete in Ironman races, he can most certainly try new foods.

This salad is absolutely perfect for a hot, humid day. The salty-sweet combination of fruit, feta, and onions may sound weird at first, but it’s just divine. It left my skeptical husband and I fighting over the last bits while we cleared our dinner plates.

In case you’re wondering about the fancy schmancy salt grater pictured above, my Mother-In-Law hid it in my stocking one Christmas. It’s a WBM Himalayan Chef Grater that came with 3 different Himalayan Pink Salt Chunks and I absolutely adore it. There is just something so cool about grating your own salt!

Watermelon Orange Feta Salad

Ingredients:

  • 1/4 of a small (6 pound) seedless watermelon
  • 1 large orange (or 2-3 nectarines), peeled with pith removed
  • 1/4 small red onion, very thinly sliced
  • 2 ounces feta cheese, thinly sliced
  • 1/4 cup fresh parsley, roughly chopped
  • 4 teaspoons olive oil
  • Salt and pepper, to taste

Directions:

Step 1: Cut watermelon into ½” thick pieces (rind removed) and arrange on a serving platter. (I like to use juice cups to cut out pretty little circles, but triangles work fine too!)

Step 2: Arrange orange, red onion, feta and parsley on the platter.

Step 3: Drizzle with olive oil, and season with salt and pepper. (If you’re looking for a Pink Himalayan salt grinder like mine, click here. If you prefer a twist and grind version, try this one.)

    As the aforementioned skeptical husband, I can honestly say that I had my doubts about this salad, but it was really, really good!
