National Peanut Butter Lover’s Day

We Know Stuff Peanut Butter Cookie
On this wonderful National Peanut Butter Lover's Day I would like to share with you my favorite peanut butter cookie recipe. I have been making this recipe for a few years now, finding the original recipe in the Fannie Farmer Cookbook. This recipe make more of a cakey cookie than a crispy one. This dough is very versatile and you can easily pop a Hershey Kiss into it or add chocolate chips if you like your peanut butter with a little chocolate! Enjoy!

Ingredients:
1 cup shortening
1 teaspoon vanilla
1 cup granulated sugar
1 cup brown sugar
2 eggs, beaten
1 cup peanut butter
3 cups flour
1/8 teaspoon salt
2 teaspoons baking soda

Step 1:
Preheat oven to 350 degrees. Grease cookie sheets. In mixing bowl, cream the shortening, vanilla and sugars. Add the eggs and beat well.

The one thing my husband said after his umpteenth cookie was….maybe next time you could make it with chocolate chips? No problem, I’ll make those on National PB and Chocolate day!
