As a busy mom, I am always on the lookout for slow cooker meals. I spend a decent amount of time scouring Pinterest trying to find recipes that will work for my family. My favorite slow cooker meals are the ones that require minimal ingredients and don’t take a lot of time to prep. This is one of my favorite recipes for myself and my husband. (Notice I didn’t include the kids on this one.)
My kids are not the biggest fans of lentil soup, and I am ok with that. I always have an alternative for my kids when I know there is no way they are eating the planned meal. I know this goes 100% against the advice my mom gives me about feeding my picky eaters. She believes in one meal for all and growing up, that worked in our family. Although I love the concept of one meal for all, it doesn’t work for my family.
Typically my husband gets home much later than my children actually eat dinner. Most nights I make them their own dinner and I sit with them while they eat and we talk about their school day. When my husband comes home (right around the time the kids are getting into bed), we have dinner together. Seeing that it is usually late – soup is the perfect solution.
Especially if the soup is a slow cooker one!
Slow cooker meals take the stress out of having to make two different dinners each night. I can throw a few ingredients in the slow cooker and forget about it until dinner time. This allows me to spend time making a healthy meal for my kids, myself and my husband. No one wants to end their day rushed, feeling like a short order cook. Especially not me. I would rather spend the time I save listening to my kids hearing about their busy days.
I have a few slow cooker soups that are on rotation in my home, Potato Corn Chowder and Creamy Tortellini Soup always hit the spot. If you are a fan of lentil soup, this one is a beauty. Fast with minimal ingredients you can just toss everything in and turn on your slow cooker. I would be lost and hungry most nights without my Rival Slow Cooker.
SLOW COOKER LENTIL SOUP
Ingredients:
- 1 (16-ounce) package dried green lentils, rinsed
- 2 slices diced bacon
- 2 carrots, diced
- 2 stalks of celery, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
- 6 cups water
- 1 teaspoon Organic Better Than Boullion
Directions:
Step 1: Layer ingredients in slow cooker – lentils, bacon, carrots, celery, and garlic.
Step 2: Pour in the water and add teaspoon of Better Than Boullion on the side of the ingredients. Do not stir.
Step 3: Cover and cook on high 4-6 hours or on low 8-10 hours.
