Taco Thursdays

We eat tacos every week on Thursdays. If I even try to serve anything else but tacos on Thursdays, Tyler completely breaks down and goes on a hunger strike…until I feed him a taco. 

It’s really quite absurd, but I am just so happy that he even eats tacos, that I just give in and make tacos every…single…Thursday. 

But, last week, I had a teensy-weensy mental breakdown. If I had to eat one more taco, on one more Thursday in a row, I was going to lose my mind. There had to be some way I could shake things up a bit so that Brennan and I weren’t forced to eat tacos week after week.

I started thinking about Ty's tacos. He doesn't eat them with meat, so all I really had to do was pull together something that had rice, black beans, corn, and avocado in it. What about an orzo salad? If I swapped out the rice for orzo, perhaps it would work. All it really needed was a nice splash of olive oil, some of Jane’s Crazy Salt, and lime juice.

Brennan ran to the barbeque and cooked up some lime marinated chicken while I set to work making the orzo salad. Just in case the kids freaked out, we planned to serve the orzo salad alongside their favorite – toast and jam – just in case all hell broke loose…

The verdict:

Tyler asked “What’s this funny looking rice? It’s not yellow.” He did take a bite, but pretended that the orzo was poison and refused to eat the rest of it. But, he ate his toast & jam, and it was finger licking good!

Abbey just stabbed the avocado with her Dora fork and said, “Me eat bread!” Gotta love a girl who knows what she wants, right?

 And, not that we count, but Brennan and I loved our taco escape.

As always, I’ll keep trying…but for now, it looks like it’s back to Taco Thursdays…
