My husband is the type of guy that has to had some sort of bread product at most meals. Especially if it is soup. As I have mentioned we are big soup junkies over here. I discovered this recipe for Baking Powder biscuits in the little pamphlet that came with my Cuisinart mixer. I have been making this for a few years now and it is always a nice quick biscuit to pop in the oven. Over the years I have experimented with different ways of making it. From large round biscuits, to drop biscuits to smaller ones. Any way you make them, they are fool proof!
Ingredients:
2 cups all-purpose flour
4 teaspoons baking powder
1/2 teaspoon salt
1/3 cup shortening (or butter)
2/3 cup milk
Step 1:
Place flour, baking powder, salt and shortening in mixer bowl. Attach bowl and flat beater to mixer. Turn to Stir Speed and mix about 1 minute, stop and scrape the bowl. Add milk and continue to mix until dough starts to cling to the beater. (If you do not have a stand mixer you can use a hand mixer!)
Step 2:
Turn dough onto lightly floured surface and knead for 20 seconds or until smooth. Roll out to 1/2 inch thickness. Cut out with biscuit cutter. I used a jelly jar cap. (You can also use an upside down glass or mug depending on how large you want them.)
Step 3:
Place on greased baking sheet. Bake at 450 degrees for 12 – 15 minutes. Serve immediately.
