I'll be honest, this isn't really Eggs Benedict. Traditional Eggs Benedict call for homemade Hollandaise sauce and Canadian bacon. I was a bit short on time and decided to cheat with Knorr® Hollandaise sauce. I am not a big fan of Canadian bacon, so I decided to go with some good old Boars Head bacon…extra crispy. Maybe that really makes this plain old poached eggs and bacon and some stuff on top. Either way it was yummy and a nice alternative to Sunday morning pancakes!
Ingredients
4 English muffins, split and toasted
8 slices bacon, cooked
8 eggs, poached
1 package Knorr® Hollandaise sauce mix, prepared according to package directions
Step 1:
Cook your bacon as you like it. Place aside while you poach your eggs.
Step 2:
Boil water in a large sauce pan. Crack your eggs into separate bowls. Slip your eggs one by one into boiling water. Cook for 3 – 5 minutes depending on how firm you like your yolk to be.
Step 3:
Top each toasted muffin half with bacon, egg and Knorr® Hollandaise sauce mix.

When I was poaching the eggs my daughter kept asking me what that “stinky smell” was!
I hate the way poached eggs smell when cooking – but LOVE how they taste! Never thought to “cheat” at eggs benedict…but it sounds good to me!
Laura it must be a guy thing! Tom asked me to make him this for his birthday dinner. I was like “Uhhh how in the world do you poach an egg!”
Greg is always begging me to make eggs benedict, but I’ve always been scared to try to make hollandaise…will have to try the easy way!
