Souper Simple Chicken Tortellini Soup

This Souper Simple Chicken Tortellini Soup is a fast family favorite and can be on the table in no time flat! It’s a perfect weeknight meal for winter!
We Know Stuff Chicken Tortellini Soup
My family loves chicken soup. They love big hearty vegetables and giant egg noodles swimming in a slow cooked broth. In theory that sounds really nice, but most nights I don’t have that kind of time to make chicken soup. I decided to come up with a faster version for the nights I just don’t have the time. This is my “souper” quick chicken and tortellini soup. (I couldn’t resist that one!)

The key is to dice the vegetables small so they cook very quickly in the broth. As soon as your veggies are simmering and tender, bring it all up to a quick boil and throw the frozen tortellini in. I usually boil my chicken first and then set it aside. I feel it can get a little tough if it is left simmering for too long. Most nights I don’t know what kind of time I am working with, so I don’t add it until right before I throw the tortellini in.


As a side note, I have tried many different kinds of frozen tortellini. I prefer the Seviroli brand. This is the only one I have found  that tastes like real pasta and cheese. A lot of other brands taste very fake to me and they just don’t taste like tortellini. So if you can find this brand, I recommend it. If not use whatever tastes best to you!

SOUPER SIMPLE CHICKEN TORTELLINI SOUP

Ingredients:

  • 2 chicken breasts cut into cubes
  • 8 cups chicken stock
  • 2 carrots diced
  • 2 stalks celery diced
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 1 package frozen Seviroli cheese tortellini

Directions:

Step 1: Place cubed chicken in chicken stock and bring to a boil. Boil until cooked through (8 minutes). Pour chicken and stock over a sieve to remove fat. Place cooked chicken in separate bowl.

Step 2: Put strained stock back into pot. Add salt, pepper, garlic powder, carrots and celery. Simmer for 10 minutes or until vegetables are tender. (Depending on how large you cut your vegetables, they will take longer.)

Step 3: Bring soup up to a boil. Add cooked chicken and frozen tortellini. Boil for as long as package recommends. Serve immediately.
