My sister recently introduced me to Wasa crispbreads and I am becoming a little obsessed with them. They make it very easy to omit bread from your diet if you are watching your weight or if you just want to consume more whole grains. I have been trying to incorporate Wasa into my diet on a daily basis.
Like most stay at home moms, my lunch is usually a handful of goldfish and a few scraps of leftover crust from my kid's sandwich. I have been trying to make an effort to not only eat healthier, but to sit down for a few minutes and eat with my kids. I have noticed they are always willing to try something new if they see mommy eat it first.
Here is a little lunch I whipped up in about 2 minutes. I made this with simple ingredients I already had in the house. If my calculations are correct, this little snack came out to 193 calories.
Ingredients:
2 Wasa Crispbreads (40 cal)
1 plum tomato (13 cal)
1 polly-o string cheese (80 cal)
1 tsp olive oil (60 cal)
Basil
Salt & Pepper
Step 1:
Dice plum tomato and string cheese. Put into small bowl.
Step 2:
Add 1 tsp extra virgin olive oil. Sprinkle with salt, pepper and pinch of basil. Mix together.
Step 3:
Rub a little olive oil on the crispbread.
Step 4:
Top with tomato & mozzarella.
