Shortly after reading my sister's post on Easter Bunny Fondue, I found myself with a leftover Easter Rooster. I didn't know it was even possible for anyone – no less a kid to get "sick of" chocolate, but mine did. I really tried pushing the chocolate on the kids, but they kept telling me "no thanks". I finally took the hint and decided to melt the little guy down for some chocolate dipped biscotti.
Is it just me or does this rooster look really mad? I think he knew
what my plans were…
Ingredients:
2 cups flour
3/4 cup sugar
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/8 teaspoon salt
3 eggs
1 teaspoon vanilla extract
Chocolate bunny/rooster/egg
Step 1:
Mix flour, sugar, baking soda, powder and salt together. Mix vanilla and eggs together in separate bowl. Add eggs to flour mixture and stir.
Step 2:
Place on lightly floured surface and knead everything together. Separate dough into 2 equal pieces and form into flat football shapes. About 3/4" thick.
Step 3:
Bake at 375 degrees for 25 minutes. Let cool for 15 minutes. Cut loaves width wise. Place biscotti on baking sheet, bake for additional 8 minutes at 350 degrees.
Step 4:
Melt your leftover chocolate. Dip the cooled biscotti into it. (I chilled my dipped biscotti in the refrigerator until the chocolate hardened.)
