When we were kids, we used to play with the Eve Family all of the time. They lived right down the block from us, and our moms liked to share recipes with one another.

As an adult, I love finding Mrs. Eve's recipes in my mom's recipe box. They remind me of some really good childhood memories like their enormous sunflowers and roller skating in the basement!


Nostalgia aside, the fact is, Mrs Eve's recipes are really delicious. Her Cheesy Potato Casserole is to die for and it makes my Irish heart sing! For what better combination is there, than potatoes and cheese? Try it, you'll love it…

DORIS EVE'S CHEESY POTATO CASSEROLE

Ingredients:
* 8 medium potatoes
* 1/2 medium white onion, diced fine
* 1 teaspoon salt
* 1 teaspoon pepper
* 1 1/2 – 2 cups shredded cheddar cheese
* 1 – 1 1/4 cups Greek yogurt (or sour cream)


Directions:

Step 1:Wash and boil potatoes for approximately 15 minutes till fork tender. Potatoes should not be mushy. Cool potatoes by running cold water into the pot. Grate potatoes with a ox grater into a large bowl. Don't pack potatoes – keep fluffy.

Step 2: Add diced onion, salt, pepper, cheese and yogurt. Toss with hands and place in a casserole dish. Sprinkle more cheese on top and place little pats of butter on top.

Step 3:Cook on 350 degree F for 40-45 minutes until cheese is crispy. Serve alongside a barbecued steak and vegetables.

    I love cheesy potatoes so I will give this try – I think I will go for the sour cream version…why start being all greek yogurt healthy now? 🙂
