Sunday was such a beautiful day around here that it inspired me to make potato pancakes. I was determined to spend as little time in the kitchen as possible. I needed some sort of side dish to go with our steak and corn on the cob dinner. I knew I had a few lonely potatoes hanging out in my pantry. I realized I could pretty easily sit in the backyard peeling and grating potatoes while the kids played.
Of course every time they yelled "Look at me!" I grated my knuckles, but it was worth it to have the extra sunshine time. (The kids loved their potato pancakes dipped in applesauce.)
*I know potato pancakes are usually made with onion, but I left them out (my kid's won't touch food that smells "stinky".) If you don't have kid's that have super sensitive nasal passages feel free to grate some onion into the mixture!
4 large baking potatoes
1/4 teaspoon baking powder
2 tablespoons flour
Peel and grate potatoes with a hand grater or a food processor.
