Vanilla Pudding Bundt Cake

The other morning my son came up to me holding a box of cake mix. He held the box up and asked if I could make him some cupcakes. I told him I couldn't. Not because it was 7 AM, not because I didn't have coffee yet, I just didn't have any frosting in the house. And I definitely didn't have the ingredients I needed to scratch some together.

My "mommy guilt" kicked into over drive when he looked at me with his big brown eyes and said "Please? Please please?" No…anything but that. He crushed me. I didn't know what to do.


I figured if we couldn't bake cupcakes, baking a cake was the next best thing. Except for the no frosting thing. Ugh, this was going to be a pretty sad cake, just like my Tommy. As I stared mindlessly into my pantry I saw that I had everything I needed to make the walnut and brown sugar topping I used for my Walnut Coffee Cake. Yes! That would do! And then we spent our morning baking a cake. (Not really the entire morning. This is the easiest, quickest cake to make!)

Ingredients:
1 box yellow cake mix
1 package instant vanilla pudding
1 teaspoon vanilla extract
4 eggs
3/4 cup vegetable oil
3/4 cup water
1 cup chopped walnuts
1/2 cup brown sugar (packed)
6 tablespoons melted butter

Step 1:
Combine melted butter, walnuts and brown sugar. Pat into a well greased bundt pan.

Step 2:
Mix yellow cake mix, instant pudding, eggs, vegetable oil, water and vanilla extract together with and electric mixer for 2 minutes on medium speed.

Step 3:
Layer on top of walnut mixture. Bake at 350 degrees for 40-45 minutes or until knife comes out clean. Let cool and then flip over onto a cake stand or plate.

    Thank you Aunt Daniele for sending over some of this super tasty cake. The kids and I ate the whole half you gave us for lunch today. That’s right – we ate the whole dang thing – oink oink!
