Country Living is one of my favorite magazines. I save all of my past issues and leave them next to my recumbent bike as incentive to workout each morning. I don't let myself sit and read unless I happen to be sitting on my bike. It may sound weird, but it definitely motivates me to work out!
As I dug out my latest batch of old magazines I noticed there were so many recipes that I had missed. I happened to have all of the ingredients for the French Lentil Salad recipe I found in the present. I found this recipe for lentil salad in the April 2011 issue.
Ingredients:
3/4 pound French green lentils
3 garlic cloves, smashed; plus one clove minced
1/2 cup extra-virgin olive oil
Zest of 1 lemon, plus 3 tablespoons juice
2 medium carrots, peeled and diced
salt & pepper
Step 1:
In a medium pot over medium-high heat, bring lentils, smashed garlic, and enough water to cover lentils by 1 1/2 inches to a boil. Reduce heat to medium-low and simmer for 10 minutes. Add 1 teaspoon salt and simmer for 10 more minutes. Turn off heat and let lentils rest for 15 minutes in cooking liquid. Drain lentils and discard garlic.
Step 2:
Place lentils in a medium bowl and let cool slightly. Toss lentils with remaining ingredients and season with salt and pepper. Serve warm or at room temperature.
