My father-in-law is a really great guy. Now naturally, I'm biased, but he really is. He likes to take care of everyone around him, and you don't find many people like that anymore; everyone is all about WIIFM (what's in it for me).
Poppy not only cares for his friends and family, but he's also a really good boss. Now I don't work for Poppy, but I wish I did. He's one of the few good guys left in the business world – and he even planted his staff a vegetable garden.
That's right. When his row of Arborvitae died at the office, he decided that he would plant a vegetable garden for his staff instead. So each spring, he plants a bunch of tomatoes, cucumbers and zucchini – and they can pick whatever they want, whenever they want. How cool is that?
So anyway, my husband came home the other day with the biggest zucchini I've ever seen. It was so big that my nephew kept riding it around like a horse. I'm not kidding – this thing was easily 2 1/2 feet long. I knew it would be full of seeds, but I'm all about waste not, want not, so I got out my grater and went to work.
First on my list, was my favorite Zucchini Bread recipe. I posted this recipe last year, but couldn't wait to make it again. It's exactly what you'd expect a traditional zucchini bread to taste like – a happy blend of cinnamon and nutmeg, with an incredible streusel topping. There's nothing fancy about this bread – it's just plain yummy!
