My kids love cookies, so I’m always looking for ways to make them healthier. These fiber rich Oatmeal Cookies With Cranberries do the trick and taste great!
A very wise monster once said “Cookies are a sometime food“. My kids completely disagree. As much as my son loves Cookie Monster, he really thinks Cookie missed the ball on that one. They aren’t buying it.
With Thanksgiving right around the corner, I know my kids will be having their fair share of sweets. There will be endless amount of cookies, cake and pies. This year I wanted to be able to offer my kids a healthier option incase my “Cookies are a sometime food” mantra was met with blank stares.
I googled healthy cookies or something to that affect and found these Fiber Rich Oatmeal Cookies. My kids and my sister’s kids devoured these cookies! I was happy that they were having a healthy snack, and they were happy that I baked something yummy!
FIBER RICH OATMEAL COOKIES WITH CRANBERRIES

Ingredients:
- ½ cup (1 stick) butter, softened
- 1 cup brown sugar
- 1 egg
- ½ tsp vanilla
- ½ cup all-purpose flour
- ¼ cup whole wheat flour
- ½ tsp baking soda
- ½ tsp cinnamon
- ¼ tsp salt
- 1½ cups old fashioned, uncooked oats
- ½ cup dried cranberries
- ½ cup chopped pecans or walnuts
- ½ cup coconut flakes
Directions:
Step 1: Heat oven to 350 degrees. Beat together butter and sugars until creamy. Add egg and beat well.
Step 2: In a separate bowl, combined flour, baking soda, cinnamon and salt. Add to wet mixture and mix well. Stir in oats, cranberries, nuts and coconut flakes.
Step 3: Drop by rounded tablespoons onto an ungreased cookie sheet. Bake 10 to 12 minutes or until golden brown. Cool one minute on cookie sheet. Then, move to a wire rack to cool completely.

Well, they are healthier. They are definitely a lot better than plain butter cookies or other fattening baked treats that don’t offer anything in terms of fiber. However I still think even oatmeal cookies are a sometime food.
The plus with these is that, of course, it’s a good way to get kids to have their daily serving of fruits and nuts. Cranberries are rich in antioxidants and are good for battling infections in the urinary tract and elsewhere. Plus they are getting more fiber from the coconut.
