Mini Chicken Margherita Pizzas

When we were kids, our dad had a tradition that he would follow every Sunday during football season. First, he would wake up before the break of dawn and tiptoe out of the house without waking any of us. Then, he would gather up his fishing gear, and our dog, and head out for a day of fishing on his boat. Around noon, he would return home to clean the catch of the day and hose down the boat. Afterwards, he would split wood in our backyard and build a roaring fire so he could settle down into his favorite chair and turn on the football game.

My father was also notorious for skipping lunch. Our mom knew this and always anticipated that he would be asking what time dinner was the moment he snuggled down into his chair. My dad was pretty much a big kid and my mom wasn’t a big fan of hungry, cranky kids, so she always kept her pantry stocked and was very good at keeping all of us well fed. She would buzz around the kitchen and whip up a delicious snack for him and her ever-hungry children.

Although I am not the world’s biggest football fan, I have always loved the routine of getting ready for the game. I loved being surrounded by my family on those cold Sunday afternoons listening to my dad and brother talk about the players. I loved sitting with my siblings by the fire playing board games and eating the yummy snacks my mom made for us. My absolute favorite was when she made us mini pizzas. We had her little pizzas most Sundays, as it was one of the few food items that all of her 3 children could all agree on.

Now that I have a family of my own, we find ourselves following in my parent’s Sunday afternoon tradition. When the afternoon football game comes on, we start a fire and pull out the board games for our kids. I make an assortment of little snacks that I know my family will love. This past Sunday I decided to combine two family favorites using Ragú® Chunky Tomato, Garlic and Onion sauce. I combined the Ragú® recipes for Chicken Margherita and Garden Style Pizza, making a #NewTraDish of Mini Chicken Margherita Pizzas. My kids loved helping me assemble the mini pizzas and I loved that they were ready in minutes!

MINI CHICKEN MARGHERITA PIZZAS

Ingredients:

  • 1/2 cup Ragú® Chunky Tomato Garlic & Onion Sauce
  • 1 ball of pizza dough, enough for one 12 inch pie
  • mozzarella cheese
  • 1 pre-cooked chicken breast
  • 3 mini sweet peppers

Directions:

Step 1: Divide ball of pizza into 6 smaller dough balls. Divide a 1/2 cup of Ragú® Chunky Tomato Garlic & Onion Sauce among the dough balls.

Step 2: Cut up 3 mini sweet peppers and layer on top of sauce.

Step 3: Cut up 1 cooked chicken breast into chunks. Divide between pizzas.

Step 4: Layer 1/4 inch slice of mozzarella cheese on top.

Step 5: Garnish with fresh herbs like basil, oregano and parsley.

Step 6: Season with salt, pepper, onion powder and garlic powder to your liking.

Step 7: Bake on a parchment paper lined cookie sheet at 500 degrees for 8-10 minutes.

    What a simple yet yummy idea! I really loved how you recalled your childhood memories of your dad and his routine, and how your mom was always prepared with a great snack for you all. It created a really lovely visual for me. Made me really wish we had family close by.

    My kids love making their own pizzas and I always use Ragu… it’s a staple in my kitchen. It tastes great every time and I even have my Italian mom using it in a pinch!

    I’m with Liz, Ragu is a delicious sauce. At one point we had probably ten jars in our pantry because we kept finding it on sale and HAD to buy it.
