This past week was an absolute blur for me. My daughter caught a horrible stomach virus and we found ourselves at the doctor’s office multiple times. As a worried mom, I was at her side day and night trying to ease her discomfort. I hardly had time to notice that we had 27 inches of snow dropped on us! Luckily my husband was able to do all the fun snow things with my son; igloos, snowmen, snowball fights…
I called my mom during a moment of calm, while me daughter was sleeping. I recall telling my mom in amazement “I can’t believe only ONE of them got sick – we got so lucky!”
My mom, knowing I was probably a wee bit delirious from lack of sleep didn’t want to be the one to burst my joyous bubble. She simply replied “Mmm hmm” in that special mom way that tells you to stop counting your chickens before they hatch. And hatch they did…
The next day my son promptly came down with the same stomach virus.
After a long week filled with ginger ale and saltine crackers, I didn’t have much energy left for cooking. On a very quick trip to the store, I came across Michael Angelo’s frozen lasagna. I quickly flipped over the package and was pleasantly surprised by the ingredients. All of the ingredients were real food ingredients, I knew what every listed item was. When feeding my family, it is very important to me that I limit processed food as much as possible.
As Saturday rolled around, my kid’s were able to stomach some simple chicken soup and were in bed very early. I decided to surprise my husband with a little Italian Night in, which was sponsored by Michael Angelo’s Gourmet Foods. With our little one’s asleep in bed, we were able to enjoy a delicious lasagna dinner complete with salad and italian bread. After dinner we enjoyed espresso and more than a few Ferrero Rocher chocolates. Clean up was quick and easy, leaving us plenty of time to enjoy our favorite wine while watching the Italian Classic, Roman Holiday!

Roman Holiday is a great movie! I like how you themed the dinner/dessert/entertainment. I’ll have to remember that for the next “date night in” with my hubbie.
