Summer has finally arrived after a very long dreary spring. On several chilly June days my kids actually asked me if we could light a fire. But it’s almost summer I protested. And they quickly pointed out that is was cold and raining, and they needed a fire to warm up. I couldn’t argue with them, it was all true. After many, many “rain, rain go away” chants, the rain has finally respected our wishes. And we couldn’t be happier to feel the sun on our faces!

Our calendar is quickly filling up with events for the 4th of July, summer birthday parties and beach gatherings. During the summer I like to bring along a cooler full of assorted ice cream for both the kids and the adults. Nothing says summer, like parents and kids digging enjoying favorite ice cream in the hot summer sun.

When I’m not lugging ice cream treats around, I like to whip up ice cream desserts. Ice box cake and home-made ice cream sandwiches are family favorites. Recently, my sister and I had a last day of school celebration at our mom’s house. We surprised the kids with a pool party and homemade ice cream cake.

This ice cream cake is easy and fun to make. You can have the kids pitch in on the assembly. Everyone loves pitching in to help make this cake. I’m going to take a wild guess that it is from all of the swiped spoonfuls of ice cream they get to enjoy during assembly. For me, the best part of summer is having my kids come home sun kissed, waterlogged and with ice cream on their faces. It’s the perfect recipe for a fully enjoyable summer’s day.

HOMEMADE ICE CREAM CAKE RECIPE

Ingredients:

  • 1, 9 ounce package of chocolate wafers
  • 2 tablespoons turbinado sugar
  • 4 tablespoons unsalted butter
  • 6 tablespoon hot fudge sauce, heated
  • 4 tablespoons caramel sauce
  • 1 1/2 cups Blue Bunny vanilla chip ice cream, softened
  • 1 1/2 cup Blue Bunny chocolate ice cream, softened

Directions:

Step 1: Take ice cream out of freezer and set on the counter to thaw. Ice cream should be very soft, but not liquified.

Step 2: Dump the chocolate wafers into a blender or food processor and pulse until crumbly. Place crumbs into a large, clean bowl.

Step 3: In a microwave-safe bowl, melt butter in the microwave. Add turbinado sugar to the butter and stir until all of the sugar has dissolved. Add butter to chocolate crumb mixture. Toss to coat.

Step 4: Press chocolate crumb mixture on top of the plastic bag and press firmly into place. This is your base layer.

Step 5: Pour warmed fudge sauce over crumb mixture and spread evenly with a spatula. Add the caramel sauce next. After the caramel sauce is spread evenly over the fudge sauce, add a chocolate ice cream layer followed by a vanilla chip ice cream layer. Lastly, cover the vanilla chip ice cream with a decorative layer of whipped cream.

Step 6: Place into the freezer to set for at least 1 hour, but 3 hours if preferable. Scoop onto plates and enjoy!
