Football season has finally arrived and with it, some beautiful fall weather. After a long, hot, sticky summer we couldn’t be more thrilled with the cooling temperatures. For our busy family, Sunday mornings are usually filled with our children’s assorted sports activities. By late afternoon everyone is back home, gearing up for football and lots of yummy food. At our house the kids look forward to the snacks as much as the adults look forward to the game!
As we started our tradition of getting together on Sunday afternoons for football, I realized being stuck in the kitchen wasn’t much fun. Honestly, the last place I want to be is trapped in the hot kitchen. I would much rather be sitting with my family, enjoying their company as we eat our snacks and jump up and down for our favorite teams.
To make this a reality, I prepare as much as I can in the morning before we head out to sports and practices for the kids. By the time the afternoon rolls around, I am just throwing a few items on the grill.
One of my favorite recipes to make is Hot and Spicy Grilled Chicken Salad with El Yucateco Hot Sauce. It’s quick and easy to make and can be enjoyed by everyone. El Yucateco Hot Sauce is made with fresh red habanero peppers, tomato, and select spices and seasonings. This habanero hot sauce is the perfect “all purpose” sauce and makes a great marinade.
HOT AND SPICY GRILLED CHICKEN SALAD
Ingredients for Marinade:
- 4 boneless chicken breasts
- 2 tablespoons of El Yucateco Red Habanero Hot Sauce
- 2 tablespoons lime juice
- 2 tablespoons wildflower blossom honey
Ingredients for Salad:
- 1 15 ounce can black beans drained and rinsed
- 1 15 ounce can of corn drained and rinsed
- salsa ranch salad dressing
- red pepper
- avocado
- baby spinach
- tortilla strips
Directions:
Step 1: Rinse your chicken breasts. Place chicken in a large dish and cover with El Yucateco Hot Sauce, lime juice and honey. Pierce chicken with fork and turn once to coat chicken completely. Place chicken in the refrigerator for 1-2 hours.
Step 2: Remove marinated chicken from fridge and allow the chill to come off of them. Preheat your grill to high heat. When the grill is nice and hot, place chicken breasts on the grill and cook 4-5 minutes on one side until char marks start to form. Flip chicken over and cook until an instant-read thermometer inserted in the chicken reads 155 degrees F, approximately another 4-5 minutes. Remove chicken from grill and allow to rest for about 5 minutes. Slice on a diagonal.
Step 3: Assemble salad using spinach, beans, corn, avocado and red pepper. Top with grilled chicken, salsa ranch dressing and crunchy tortilla strips. Or, set up a salad bar so your tailgating guests can create their own salad.
