My husband travels a lot for work. So during the week, I am often flying solo. This means that I’m responsible for everything: from morning until bedtime, I’m Mom, their chauffeur, their chef and their housekeeper. I’m probably forgetting a bunch of other positions, but let’s just say that at the end of the day, I’m shot.

On the nights that I can get them fed, bathed and in bed on time, I’m thrilled. But, for every night that’s a success, there’s also a ton of misses tossed in there too. It could be that the kids had an after school activity that ran late. Or it could be that I had to finish up something for work right after we finished up their homework. Or it could just be that we all wanted to go for a bike ride instead of cooking dinner.

On those nights, the kids usually resort to super simple dinner fare: muffins, pastina, soup. If it can be cooked in a jiffy, they’re all in. But when they’re tired, my kids have no patience for waiting for dinner. I’m all too happy to make them what they want, but that doesn’t always mean that I want to eat what they’re eating.

So after they eat and are hustled off to bed, I’ll make something super simple, but completely satisfying for me. Now remember – I’m also super tired, so dinner for me, does not mean that I am actually cooking anything from scratch. It means I am pulling something out of my freezer, popping it into the oven and then just putting it on a pretty plate so I can pretend that I made it myself!

On nights like these, my puppy and I dine together. Well, she just sits next to me with her big puppy eyes begging me to drop something on the floor. And who could blame her when I’m eating something wholesome like Blake’s All Natural Pot Pies? She may not want my healthy side salad, but she definitely wants the roast chicken hiding inside my chicken pot pie. Sorry,puppy, it’s not happening!
