My kids love yogurt muffins and they’re not very particular about which flavor of yogurt goes into them. In their opinion, a good muffin is a good muffin – plain and simple. Naturally, they have their favorites, but they’ll happily eat any muffin that gets in their way.

This is a win-win for me because my kids take a homemade muffin to school for lunch every single day. Yep, you heard me right. My children are very particular about what they’ll eat and if it doesn’t look “right” – they just won’t eat it.

They also don’t like to take sandwiches to school either. I’m not kidding. Apparently, if you want to have time to chat with your friends, a sandwich just gets in the way. So over the years, I’ve just learned that if I want to make sure that they eat something, it’s better if I make it instead.

This means that every Sunday, I make muffins for the week. The type of muffin recipe always changes, but it usually has some sort of fruit in it. Other than that, anything’s game.

One of my kids’ favorite muffin recipes are these easy banana muffins. This always cracks me up because I call them “Leftover Muffins” whenever I mention them to my husband. You know, whatever fruit and yogurt is “left over” goes into the batter. Get it? Oh, nevermind.

Besides, the kids don’t need to know what I call these yogurt muffins as long as they eat them, right? Plus, whenever I do add leftover yogurt, like Yoplait, to their muffins, I can feel good knowing my kids are getting 20% of their daily calcium while they’re eating their lunch! (To keep things simple, I just stock up on fridge packs whenever I’m at Walmart. I love how they stack so nicely in my fridge!)

This muffin recipe is moist, cake-like, and not too sweet. It’s perfect for packing in lunchboxes alongside a container of yogurt and a milk box. I also like to pack them some nuts or granola too for them to make little parfaits with if they choose to.

And if we’re being completely honest, after they head off to school, I’ve been known to gobble one down sitting out on the back deck with a hot cup of coffee too!

Easy Banana Muffins Kids Will Love

Makes 24-30 muffins.

Ingredients:

  • 3 cups flour
  • ½ teaspoon baking soda
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 8 tablespoons unsalted butter, room temperature
  • 1 cup sugar
  • 2 large eggs
  • 3 bananas
  • 2 cups yoplait strawberry banana yogurt

Directions:

Step 1: Preheat oven to 375°F. In a medium-sized bowl, whisk together flour, baking soda, baking powder, and salt; set aside.

Step 2: In a large bowl, cream the butter and sugar together. Add the eggs, one at a time; mix each egg until just incorporated.

Step 3: Mash bananas with a potato masher or fork and add to the wet mixture. Add yogurt and mix until blended.

Step 3: Add ¼ of the dry ingredients to the wet mixture and mix until just incorporated. Repeat this step until all dry ingredients have been added to the wet mixture. Do not over mix.

Step 4: Line two, standard size muffin pans with paper liners. Fill liners with batter. Bake muffins at 375°F for 20 minutes. Test with a toothpick; toothpick should come out clean when poked into the center of a muffin. Remove muffins from the muffin pans and cool on a wire rack.
