Summer’s here and that means that my kids are running non-stop from morning till dusk. They bounce out of bed as soon as the sun rises and refuse to stop moving until the sun has set. This means that working from home is tons of fun.


Did you catch a teensy weensy bit of sarcasm there? Sorry. Sometimes, it gets the best of me, especially when my beloved Angels think that I am their personal Chef and should be on call 24/7.

Silly kids! After a week or two of being on vacation, they remember that I really do work at the computer and that I’m not “just shopping online all day.” However, once we settle into our summer schedule, everything gets much better. I make a promise to them that I’ll get up early and do all of my work before lunchtime IF they entertain themselves (Hello? Enjoy your freedom, kiddos!) and let me finish without 800 interruptions. Then, we go do something fun!

And even though I’m griping a bit, they really are good kids – unless they’re hungry. Then, they’re like little Velociraptors snapping at my ankles. So I like to make sure that I have a healthy, grab-and-go snack like this Chocolate Protein Ball Recipe sitting in the fridge just in case they need it.

This Chocolate Protein Ball Recipe is protein-rich and fairly guilt-free. They’re really easy to make in a pinch and my kids like to think that they’re “getting away with something” because these chocolate protein balls are really decadent. I even eat them as my dessert!

This delicious Chocolate Protein Balls Recipe is a protein-filled way to satisfy your sweet tooth. They're guilt-free too, so snack away! 

Chocolate Protein Balls Recipe (Makes 16)

Ingredients:

  • ¼ cup almond butter
  • ½ cup dark chocolate chips, finely chopped
  • ¾ cup Terra’s Kitchen Chocolate Protein Powder
  • 2 tablespoons cocoa powder, plus more for rolling (optional)
  • 3 tablespoons water
  • 1 tablespoon flax seed

Directions:

Step 1: Place all of the ingredients into a food processor and pulse until the mixture just comes together.

Step 2: Prepare a baking sheet lined with parchment paper. Take a heaping tablespoon of the mixture and roll into a ball then place the balls on the sheet pan. After the balls have set for a few hours roll in the cocoa powder. (optional)
