Sunday was such a beautiful day around here that it inspired me to make potato pancakes. I was determined to spend as little time in the kitchen as possible. I needed some sort of side dish to go with our steak and corn on the cob dinner. I knew I had a few lonely potatoes hanging out in my pantry. I realized I could pretty easily sit in the backyard peeling and grating potatoes while the kids played.
Of course every time they yelled "Look at me!" I grated my knuckles, but it was worth it to have the extra sunshine time. (The kids loved their potato pancakes dipped in applesauce.)
*I know potato pancakes are usually made with onion, but I left them out (my kid's won't touch food that smells "stinky".) If you don't have kid's that have super sensitive nasal passages feel free to grate some onion into the mixture!
Ingredients:
4 large baking potatoes
1/4 teaspoon baking powder
2 eggs
2 tablespoons flour
Step 1:
Peel and grate potatoes with a hand grater or a food processor.
Step 2:
Rinse with cold water and place in paper towels. Ring out excess water.
Step 3:
Mix all ingredients together.
Step 4:
Make a ball from 2-3 tablespoons of mixture. Place in vegetable oil and flatten with spatula or spoon. Fry and flip in vegetable oil until golden brown.

These look so good and crispy, I love potatoes!

They are very similar to hash browns. I told my daughter it was like a giant french fry. She loved them (so did I!)

I could pop every single one of those in my mouth right now! They look out of this world delicious. Of course any potato fried is delicious right? LOL!
