Last weekend, we took the kids apple picking at Hank’s Farmstand in Watermill, NY. I haven’t been apple picking in years, and I was so excited to see how the kids would react when they realized that apples really do grow on trees. It was great fun watching them run through the apple orchard, and for just $15 we left with a one-peck bag of mixed variety apples (approximately 25-30 apples!).
Needless to say, I’ve been using apples in everything lately, especially this sweet and nutty Apple Nut Bread. It’s a tasty quick bread gently flavored with grated apples and a brown sugar and walnut topping.
APPLE NUT BREAD
Ingredients:
- 1/4 cup butter
- 1/4 cup sugar
- 2 eggs, beaten well
- 2 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp ground cinnamon
- 1/4 tsp nutmeg
- 1 tsp vanilla
- 2 cups grated apples, skins on (I used about 6 small apples; 4 green, 2 red)
- 1/3 cup brown sugar
- 1/3 diced walnuts
Directions:
Step 1: Preheat oven to 350.
Step 2: Butter or grease a 9 by 5 loaf pan.
Step 3: In a large bowl, cream butter and sugar together until light and fluffy.
Step 4: Beat in eggs, one at a time, until just blended.
Step 5: In another bowl, whisk together flour, baking powder, baking soda, salt, cinnamon and nutmeg.
Step 6: Core and grate apples, skins on, into a large bowl. Keep juices and fruit together. (The apple juice will help keep the bread moist.) Add vanilla; stir.
Step 7: Add 1/3 of the flour mixture to the egg mixture and mix until just incorporated. Then, add 1/3 of the grated apple, and again, mix until just incorporated. Repeat this step until all dry ingredients and apple have been added to the egg mixture. Do not over mix.
Step 8: Pour into the well-greased loaf pan.
Step 9: In a clean bowl, mix together brown sugar and diced walnuts.
Step 10: Sprinkle brown sugar and walnut mixture generously over the top of the bread; use all of it – you won’t regret it!
Step 11: Bake for 50-55 minutes. Remove from pan and cool on wire rack.
