For my husband and I, "date night" is putting the kids to bed early and having our all time favorite dinner. Home fries with a side of steak and tomato. Maybe that sounds a bit out of order, but we really love our potatoes around here. If I come home with a sack of potatoes, my husband knows he is making a trip to our butcher.
I think home fries are the perfect little potato dish. They pretty much mind their own business while you babysit whatever you happen to be cooking. When it comes to cooking, I really love anything that I can throw in a pot or pan and have cook itself. Especially since I am usually busy enforcing the invisible "hot stove" barrier from my very curious 3 and 4 year old children.
Home fries are great with steak, but they are also a great brunch dish. You can easily serve them up with some eggs and toast for a nice big breakfast. The only rule with home fries seems to be the crispier, the better.
Ingredients:
6-7 large russet potatoes
1/4 cup olive oil
salt
pepper
Step 1:
Scrub and peel 6-7 large russet potatoes. Heat cast iron pan over medium heat.
Step 2:
Dice potatoes into 1 inch x 1/2 inch pieces. Pour olive oil into pan. Pack potatoes down into cast iron pan. Generously salt and pepper.
Step 3:
Let potatoes cook until golden brown.
Step 4:
Flip potatoes over and pack down again. Add some additional oil if needed, (They should be making that hissing frying sound). Cook until golden brown on bottom. Serve.
