Watermelon Lime Granita

As soon as watermelons come into season, I find myself picking one up with every trip to the store. Everyone loves watermelon, but sometimes they ripen faster than we can eat them! I had a lot of leftover watermelon this afternoon, so I decided to make some watermelon lime granitas.

This is the fastest, easiest way to use up fruit before it goes to waste. You can make your own variation of this recipe using strawberries, cantaloupes, grapefruits, oranges – you name it. If you can fit it in a blender, you can make it into a granita!



Ingredients:
5 cups seedless watermelon
1 cup sugar
juice of 1 lime

Step 1:
Cube watermelon and place in blender with sugar and lime juice.

Step 2:
Puree in blender until smooth. Pour into large shallow dish.

Step 3:
Freeze for two hours and scrape with a fork. Freeze one additional hour, scrape again and serve!

    Seriously Dani, I have never seen someone with as much watermelon in their fridge as you. I know your kids get on food-kicks, but the watermelon kick is CRAZY! Glad to see that you found a festive way to use it all up. Now invite me over! (P.S. I’d like mine with liquor in it please!)

    you think I am lying but I am not- doing it this afternoon. going to the store anyway this mornin! SO excited. Now that I am pregnant I need a cool refreshing drink in the evenings!

    It was SO hot that day, it kept melting before I could take a picture. I kept running back and forth to the freezer! I bet you could easily turn it into a watermelon margarita – that would be REALLY good!

    Ha! Greg was just mentioning making watermelon grenada last night…I told him I would prefer watermelon margarita…but that’s just me!
