Once a week, my sister and I pile all of the kids into the car and head on over to my Grandfather’s house. At 93 years young, he attributes his longevity to healthy eating, a love for knowledge and his Polish bloodline.

Our children adore their Great-Grandfather and love spending time with him, but when you put the four of them together, chaos always ensues! So to keep them from getting too crazy (and loud!), we always bring lunch with us so we can eat together as a family, and then we sit down and make some crafts with Pop-Pop.

My Grandfather loves fruit and I like to spoil him with homemade desserts whenever I can. But since he still hangs on to his healthy eating habits even this late in the game, I have to trick him into eating something sweet!

I happened to have a bunch of strawberries on hand that needed to be used up, so I decided to make a super simple Sugar Cookie Strawberry Pizza. There’s nothing overly fancy about this dessert, but it’s a really nice twist on some ordinary ingredients that you probably already have in your refrigerator.

Note: Rustic is the key choice of words here because the sugar cookie “dough” will spread in the oven. I wanted mine to be purposely unshaped, so I just cooked mine on a regular old baking pan. But, if you want it to be a perfect circle, you should use a pizza pan.

Also, this Sugar Cookie Strawberry Pizza is best served as soon as possible. If left for too long, the strawberries will cause the sugar cookie “dough” to get a bit smooshy. It still tastes great, but I have texture issues!

Sugar Cookie Strawberry Pizza: An Easy Summer Dessert

Ingredients:

  • 16 oz pre-packaged sugar cookie dough (I used Pillsbury®)
  • 8 oz mascarpone cheese
  • 1/4 cup powdered sugar
  • 1 1/2 cups strawberries, washed, hulled and thinly sliced (use more if you like)
  • 1/2 cup homemade Strawberry Peach Jam (store-bought is fine; use more if you like)
  • More powdered sugar for garnish

Directions:

Step 1: Pre-heat oven to 350°F. Let cookie dough stand at room temperature 10 minutes to soften.

Step 2: Line a baking sheet with parchment paper, or spray a 12″ pizza pan with No-Stick Cooking Spray (I used PAM® Organic Canola Oil spray.)

Step 3: Place all of the dough onto the pan. Using your hands, or a rolling pin, flatten out the dough into a circle – approximately 10″ (the dough will spread).

Step 4: Bake in the oven for 20 minutes.

Step 5: While the pizza dough is baking, mix the mascarpone cheese and powdered sugar together in a large bowl.

Step 6: Remove the pizza dough from the oven, and while it is still hot, quickly spread the cheese and sugar mixture over the dough with a spatula.

Step 7: Place the sliced strawberries over the pizza in concentric circles.

Step 8: Place the jam in a small glass bowl and microwave for approximately 30-40 seconds. You want the jam to be soft and easy to spread.

Step 9: Using a pastry brush, gently brush the jam over the berries.

Step 10: Allow the pizza to rest for 20 minutes. Dust with powdered sugar before serving.
